5 super fast and easy meals I often prep 🍲

With my current working schedules, I have more time for food prepping at home. It's no secret I am not the biggest fan of cooking but I still do it because, this girl gotta eat.

I still have to work on a better way to manage my time because sometimes I prep my lunch last minute and usually go for the fastest options. I have to say my airfryer has become big big help and I can't picture my life without it anymore, hehe. 🍲

My point here is, you won't find super elaborated or time consuming meals here. At least not in this post. Plus, most of the time, I just follow what I'm craving without thinking much about if something goes well with something else. 

Anyway, here are 5 super easy meals I make often. I'd lie if I say I eat this in one week cuz most of the time I end up having leftovers and eat the same thing for at least 2 days but, yeah.

Tuna salad with siracha mayo. This is something that takes like 10 minutes to make. You know the deal, you mix some cans of tuna with veggies (I usually go for canned too) and I like to add a mix of siracha and mayonnaise to it. My mom sometimes serves it with boiled eggs but, I was lazy to boil them this time. I really like it that way too. And, I usually eat my tuna salad with some crackers or bread.

Taquitos dorados with rice and sweet corn. This taquitos dorados are by El Cazo. And, to me, it's one of the easiest things to eat when you have a busy day. The package comes with 20 pre-made tacos, you can find chicken or meat tacos. Chicken are my favorites. I usually just cook them for 10min in the air fryer and they are ready to eat. If I want to make a bigger effort I'd add some cream and Valentina sauce to them. Haha.
In this house we love rice so I eat it often and I thank my rice cooker for it, it's one of the best things I bought as a responsible adult, hehe. Something I like to add to my rice (when it's not Japanese rice) is some butter. I started doing it after I saw Sari (dad's partner) doing it. It really makes a difference, rice feels softer and fluffier(?). 
And to add a "salad something" to this meal, I mixed some sweet corn (cuz I L.O.V.E. it) with some... siracha-mayo of course (fav mix ever). It is SO good.

I like chicken more than meat, so I often buy minced chicken instead of meat (not that I don't ever buy it tho). I think this is one of the things I make the most haha, minced chicken with tomato sauce and veggies. I don't always eat it like this but I really like to add some bean noodles to it. They don't really have a taste so they go well with pretty much anything. Plus they are ready in less than 5 minutes.

Teriyaki beef with veggies on a bed of japanese rice. I have to say I like teriyaki chicken a lot more but this mix works too. In thi case, I make plain japanese rice. Love it way too much as it is.

Fish nuggets have to be one of my favorite things to eat, I don't eat them as often anymore tho. Not long ago I found these tilapia nuggets that, at least to me, they are the fancier version of the regular ones, they do taste better. I make them in the air fryer so there's no extra oil involved. This time I had them with some unagi sauce and veggies. I'd usually add some french fries to this dish too but, I didn't this time.

And, that'll be ot for this foodie post. Some weekends I eat out, some others I eat leftovers. It's always changing but, let me know if you'd like to see what I eat on a weekend or a regualr day.

Mon's kitchen | What I eat in a week (work edition) |

Earlier this year my uncle gave me this bento box set and ever since, I've been a little more motivated to prep my lunch, hehe.

I always go for simple things that I can eat fast-ish during our lunch break at work. Sometimes I'd buy things like sausages or make sandwiches but, there are other days where I bring some food lefovers along with small complements. And, I usually bring some flavored milk, yakult or yogurt, it depends.

We do have a microwave oven at work but I rarely use it, I'm too lazy. So, I try to bring things that can be eaten cold or, I'll just eat them like that. 😅

Honestly, I only make lunch for 3 days cuz I work from home the rest of  the week but, I decided to share 5 days to make it look more like a normal week. Here is what my work lunch looks like:

Day 1: fish fingers and some veggies. I decided to make some siracha-mayo to dip them. It was pretty good. As for the sweet snack, I had 2 small slices of condensed milk bread.

Day 2: Sausages with ketchup and siracha, I also added some watermelon with tajin as a healthier snack. For dessert, we have more bread that I had to cut in small pieces to make it fit. Lastly we have my favorite Santa Clara flavored milk, the cotton candy one.

Day 3: Tuna mayo salad with some crackers(?), yakult and a blueberry bar thingy. For dessert I brought some strawberry milk taffy.

Day 4: Two small enchiladas potosinas and a few jalapeño cheddar chips for the savory part. My usual bar and a Valie's day butter cookie for dessert and a yakult.

Day 5: One of my favorite sandwiches is peanut butter and cheese, hehe. I know it sounds gross for some but, I love it. Along with it I also brought some pineapple, a bar and another favorite, the Alpura "mermaid" milk, which it's blueberry flavor.

I know my choices might not be the healthiest or best ones but, they are fast and easy and, I like that. Don't judge me, haha. Also, I never showed it but, I always bring a water bottle with me and have some coffee every now and then.

Mon's Kitchen | My meals in a week |

It's been a while since I last share something food related. Specially something I've made. So today, I decided to share some of the things I made for lunch in a week. Thing is, sometimes when I make too much of something, I end up eating it twice or even 3 times in a week. That's why I'm only sharing 3.

Don't expect these dishes to be super elaborated, I don't spend much time in the kitchen during the week because of work. I try to go for things that are fast and easy so, yeah. Also not all of them are the healthiest option for some so... don't judge me! Hehe

The first one is one of my favorites when I don't have much time: My Mc D's menu! Fish nuggets and hashbrowns. For some reason I prefer fish nuggets over chicken ones and, I just loooove hashbrowns. There's no science here, I added some lemon juice to my nuggets and ketchup to my hashbrowns. The sauces on the side are more ketchup and a little Valentina. Which is pretty much the only spicy sauce I eat. My bestie doesn't know how I live eating like this. Hehehe. A bag of nuggets usually lasts me for like 2 or 3 days.

Since I had a little more time I made some pasta with meat and veggies. This is the easiest way for me to eat veggies! I tend to forget about them, and it's not because I don't like them. For this pasta I used ground beef, tomato sauce, chopped carrots and potato and green beans. I didn't make the sauce from scratch tho, I used Heinz's bolognese sause and added some salt with garlic to it. It was pretty good but I made enough to eat for a week! I decided to freeze part of it and eat some other day cuz, I got a little tired of it, hehe.

I bought a package of 5 frozen breaded chicken steaks (I'm not sure if they are steaks). I only used a couple and kept the others in the freezer. I decided to eat the chicken with some spinach. I actually love spinach! The chicken only had some seasoning and I had it with a tiny bitsy bit of mayo. The spinach had lemon juice and tajin, hehe. But it disappeared and doesn't show in the pic. I made enough for two days.

And then we have dessert. This was a caramel flan, since I made small portions I ended up having too many. I ate them a lot and even shared some of them. It was not bad but not sweet enough for me.

I realized I only took pics of my lunch when I drank Coca-Cola with them. I have to say that was not an everyday thing tho, some days I also had plain water or cranberry juice.

And well guys, that is that for the meals I made in a week. I can proudly say, they were good! Hehe.

Apartment 07 | Dash Skull Mini Waffle Maker | 💀

A little late but I'm finally gonna talk about my Mini Waffle Maker I received back in June as a part of my bday pressies. It is October now and since it is a Skull waffle maker, I thought it'd be the perfect time to share it. A while ago, when I shared a pic of my waffles on IG, I received many questions and comments about it so, here it is guys.

As it says, it is a mini appliance which makes it really cute and easy to store. 

It has a non-sticky surface so it's super easy to clean.

The skull pattern comes in the lower part, the top is a normal waffle. Looking online I found they have other seasonal patterns too!


Like my Dash Mini Rice Cooker, it came with a recipe book that gives you some ideas to make other type of waffles. 


The recipe I followed was the first the book has. Just make plain waffles. I could've added some vanilla now that I think about it... Anyway! It was easier than a thought I and made like 8 waffles with a little mix. 

It was defo a great gift and a fun thing to use! Perfect to make Halloween themed breaky.

I can't believe I've reached the point where I enjoy kitchen appliances this much... guess this is what adulting is like. Hehehe.

What I eat in a weekend


 I've been watching some of these videos online and I just really enjoy them! That's why I thought it'd be fun to write this post. I'm not sure if this will be interesting for some but yeah, I still wanted to share.

I do have to say that what I eat during the weekends really change depending on if I go out, buy take outs or, if I feel like prepping something nice.

Now that I'm on my own, I've been "cooking" or at least making my own food and planning my meals a lot more often and it's been a fun experience.

Don't expect to see anything fancy tho, I can be veeeery basic!

What I'm going to show you is what I ate last weekend, I decided to stay at home and prep my own meals. On a weekend, I don't really have an eating schedule, I pretty much eat when I get hungry.

Saturday January 23rd

Breaky:

I had breakfast around 10:30am I finish my morning classes at 10. Sometimes I have another cup of coffee during the class. I just didn't have enough time! I woke up late. Hehe.

I made some scrambled eggs with ketchup and a toast. I love to put ketchup on almost everything.

Of course I had my morning coffee, which was instant coffee cuz I'm lazy to make something nicer in the morning. My friend Diana gave me some sweet break the day before and I decided to eat it with my breakfast. It was super cute, super pink and, delish.

Lunch:
My lunch was around 3pm and it was pretty much leftovers. I had white rice and sardines in tomato sauce.

 I don't know how must people feel about sardines but I really like them. Also, I could eat white rice everyday.

My drink was this Korean Sparkling Melon Soda. It was so good! Not super sweet but it had this nice, artificial melon taste I really enjoy. Hehe.

And after my lunch I always crave something sweet. I had a couple of Lindor chocolates.

Dinner:

Dinner is something I skip sometimes or eat something really random depending on how hungry I am. My small dinner was around 9pm and I only had 2 small swiss rolls and a glass of cold chocolate milk.
FUN FACT: I can't drink milk if it's now flavored. I rarely do it and when I do, it has to be cold.

Night snack:

I decided to watch a movie that night and it is not the same to watch one without snacks. I chose Tostitos Salsa Verde because they are one of my favorites! Usually, I'd have them with a drink (beer or sake) but I could't drink any alcohol this time because of my booster shot. They said I shouldn't drink alcohol for 15 days... 


Sunday January 24th

Breaky:

On Sunday I usually get up around 9 or later, haha. I had breakfast around 10am. I made some french toasts, coffee and had some blueberries. I've been trying to eat more fruits and veggies cuz, even tho I like them, I don't have them as often as I should. Plus, blueberries have antioxidants and that, is a must!! 

One of my toasts has peanut butter and Choco Krispies on top, and the other one had Nutella and pink pearls.

Lunch:

Again, my lunch was around 3pm. This time I ate a bagel with philly, manchego cheese, sausages and ketchup. I usually put the sausages in the microwave and heat them until the become all wrinkly. To add some greens I had spinach.

And yeah, I had soda again~ this time it was a Korean Sparkling Calamansi Soda. I don't usually like these flavors but I never had calamansi before, I didn't even know exactly what it was. But it had a very special taste, not bad. It was a little stronger than the melon one.

Dessert was a Kinder Delice Chocolate. They are as good as small slices of chocolate cake.

Dinner:

Again, dinner was around 9:30pm and I just had two small donuts and cold chocolate milk.

Later that night I finally finished watching Shingeki No Kyojin The Final Season part 1 snacking on Pake Taxo cheese mix. I can't wait to watch the new season!

It's funny cuz as I was putting this post together I realized I didn't eat in between meals! I'm so proud, haha. Cuz I usually do it whenever I spend all day at home.  

I showed you how I drank soda with my lunch but I'm also trying to drink more water. Specially after the bad kidney infection I had last year. I always have this tumbler around me filled with water so I remember to drink water during the day. I won't lie, I don't think I drink 3ltr a day but hopefully I'll get there one day.

Apartment 07 | Dash Mini Rice Cooker |


 Welcome to a new post of the Apartment 07 Series, today I am going to show you something that is not exactly new, but was one of the first appliances I got for my kitchen before moving. It is a super cute, pink, mini rice cooker! It is from a brand called Dash, I found it on Amazon along with other colorful appliances. I've recieved many comments and questions about it, that's why I decided to share more about it here.

I looove rice, and I always wanted to have a rice cooker. My bestie has a bigger one and just loves it and I always see them on k-dramas and japanese houses. I just had to get one. 

The size and pastel color of this one defo caught my eye, plus the price was just perfect! It looks slightly different than the other rice cookers I've seen too. It's more like a small cooking pot. It is only 40.64cm tall and can make 2 cups of rice, which is enough for 2 - 3 people.

It comes with a rice paddle, measuring cup, removable pot with a nonstick coating and a recipe book. It's cool to see you can make more than rice in this baby.



I really want to try this recipe one day!

It's pretty easy to use, it has 2 options: "Warm" to keep your food nice and hot and "Cook" to well... cook! It makes rice in about 20 mins.


First rice ever made with my rice cooker

On the reviews I read before buying it, some people mentioned the rice cooker had a burnt plastic smell when they used it for the first time, I didn't have that problem.

The rice cooker comes in 5 different colors. All of then are just adorable. I'll link it here in case you wanna check it out.

The first dish I made with the rice cooker was onigiri. It was easier than I thought and they came out great! Rice was soft and sticky and it didn't take forever to cook!

I'm so proud of these babies!

Another dish I made (or at least attempted to) was tamagoyaki along with rice. I kinda ruined the egg so I just wrapped it in nori to keep it together. I was inspired by the bestie's delish looking tamagoyaki but, mine was not as pretty as hers. It was yummy tho. I sprinkled some furikake on my rice and it was ready to be eaten!


It's small enough to take it with you. I even took it to work to make onigiri with my students during summer school.

They had a lot of fun cooking!

I never thought I'd ever love a kitchen appliance this much, but I do and I'm so happy I got it!
I defo recommend this rice cooker if you live alone or cook for 2-3 people. It also saves space in your kitchen, makes cooking easier and looks absolutely adorbs. Dash has other cute kitchen appliances that I might buy in the future.
